CHICKEN TACO
INGREDIENTS

Olive oil – 1 tbsp

One chopped onion
·
Garlic cloves – 2
·
Chicken Mince – 250gram
·
Diced tomatoes with
roasted capsicum – 410gram
· Kidney beans –125gram
· Corn Kernels - 125gram
· Corn Kernels - 125gram
· Mexican chilli powder-1tbsp
· Caster sugar – 1tsp
· Taco shells – 12
· Iceberg Lettuce – 1cup
· Carrot – 1
· Chopped tomatoes – 2
· Cheese – half cup
Cooking Process
1.
First of all
heat the oven to 180°C or 160°C
2.
Heat the frying
pan and put some oil in it.
3.
Add onion and
garlic and heat them for 3 to 4 minutes.
4.
Add mince and
then cook for 5 to 6 minutes until it gets brown.
5.
Add tomatoes ,
beans , corn , chilli powder and suger .Boil all then reduce the heat to normal.
6.
Cook till the
mixture gets thicked.
7.
Bake the taco
shells until it get brown.
8.
Then sprinkle the
mince mixture into the shells .Garnish with carrot tomato cheese and Serve.

Caribbean Rice and Red Beans
INGRIDIENTS
- Vegetable oil – quarter cup
- Garlic clove – 3 to 4
- 1 small onion
- Rice – long grained 2 cups
- Dried thyme – 1 tsp
- Coconut milk – 13.5 oz can
- Kidney beans – 15.5 oz can
- Bay leaves – 2 small
- Black pepper
- Salt
- Chicken broth – 2 to 2.25 cups
- Scotch bonnet pepper – 1 whole

Cooking
Process
1 .
Take the
rice and wash them

Drain the water
3.
Take the saucepan
and add oil in it then add onions garlic thyme hot pepper and mix them for
about a minute
4.
Then add rice in
the pan along with the kidney beans and stir for 2 mins.
5.
Then add coconut
milk , bay leaves , bouillon powder (optional) , creole spice (optional) , 3
cups of water.
6.
Leave them to
boil , cover the lid and wait until rice is cooked , about 20 to 30 minutes or
more.
7.
Stir from the
sides of the pan as required to avoid burns.
8.
Add more water if
needed.
9.
The food is ready
to serve

Chicken Burrito
- Boneless Chicken
- Ground cumin – 1tbsp
- Olive Oil – as required
- Garlic – 2 cloves
- Cilantro – 1 bunch
- Black beans – 400gram
- Rice – 200gram
- Lemon – 1
- Tomatoes – 4
- Onions – 4
- Lettuce – As required
- Flour tortillas – 4 large One
- Cheddar cheese – 80gram
- Yogurt – 4tbsp
- Paprika - 1tbsp
COOKING PROCESS
1.
Preheat the pan
then place a boneless chicken b/w the sheets of greaseproof paper .
2. Place the chicken into a bowl , sprinkle the paprika , cumin and a small quantity of oil.
3. Add salt and black pepper.
4. Mix it well then place the chicken on a hot griddle. Cook for 10 mins.
5. Then take a garlic and a coriander and slice them.
6. Take a oil in a frying pan and put them in it and fry.
7. Then add the beans and fry further and then add the rice in it and cook for 5 mins.
8. Add the remaining coriander stalks and cook for few minutes the remove from the heat.
9. Chop the tomatoes and onions and put them in a bowl with a lime juice .
10. Chop and add the remaining coriander leaves and mix well.
11. Cut the lettuce and cooled chicken.
12. Put the tortilla on the grilled to make It soft then put it in the plate and add the ¼ boiled rice , beans and lettuce .
13. Put the salsa and chicken.
14. Sprinkle some cheese and add 1 spoon of yogurt as you need.
15. Wrap up the burrito.
16. Repeat the steps to make more.
